Here is the major accomplishment of this- I touched raw meat and cooked it with relative success. That is, the meat eater ate it and said it was good. This may or may not be because if he doesn't encourage these efforts I may never cook meat for him, but I'm going to pretend it's because I am a chicken breast stuffing prodigy.
Sidenote- let it be noted, my plates are not lime green. They are a lovely apple green. And next time, I will stuff my chicken with things that are a better, more contrasting color. So the end product looks a little less... beige.
Last time I bought meat at Top Foods, I noticed they had these stuffed chicken breasts that looked delicious, even to me. So I have been thinking about it for a while and then I decided I wanted to try to stuff a chicken with something. This is what I came up with.
1 chicken breast (which seemed really big to me? Are all chicken breasts this big or was this a really well endowed chicken?) and a portabella for me.
Rosemary (I wanted fennel, but they were out...bummer)
Granny Smith Apples
Bread Crumbs (would have used panko crumbs if I had them, but alas)
I chopped up the apple and the onion and sauteed them just a little bit with some olive oil. I still wanted the apples to have some crunch and not be soggy or applesaucy. I chopped up the rosemary and added that to the mix as well. At the last minute I put the blue cheese in and mixed it around just a little. It ended up more coating things than staying in chunks.
Then I used a knife to poke through the thickest part of the chicken breast and I sliced through the center but not through the sides.
Look I touched the chicken- those are my fingers!
Then I stuffed the apples and onion mix into the chicken. Rolled the chicken in some lightly beaten eggs and covered it in bread crumbs. I put it in my pan and baked it at... I think 375 for about 25 minutes, until I cut into it and it was not pink.
Anyway- we put some extra rosemary on top and cooked it all up, and it was pretty delicious- or so I hear.
My mushroom was not bad either.
I might even cook meat again. It was slimy and kind of gross, but not the worst thing ever. I am pondering getting gloves so that I don't have to actually touch the meat. I like stuffing things. I might go on a stuffing kick. There are a lot of options there.
